Easy Paleo Garlic Cauliflower Mash

If you’ve ever tried Paleo cooking then you’ve probably made cauliflower mash. It’s a staple Paleo dish and it’s one of the easiest veggies to make. Sometimes however, the results can be… less than expected. Let’s face it. Not all recipes are created equal.

Make it as garlicky and as buttery as you want! Or change up the flavor… Put a savory cheesy flavor in your cauli mash by adding in some Brewers/Nutritional Yeast.

Easy Paleo Garlic Cauliflower Mash will satisfy your cravings for comfort food and you’ll actually feel good eating it. Use this in place of mashed potatoes in any recipe and become amazed. Delicious!

Easy Paleo Garlic Cauliflower Mash

Ingredients

  • 1 Head Cauliflower Steamed
  • 2 Tbsp Ghee
  • 1 tsp Paleo Mustard *Eden Organic Stone Ground Mustard is my favorite
  • 4 whole Garlic cloves peeled
  • 1/2 tsp Pink Salt
  • 1/4 tsp Pepper

Instructions

  1. Break cauliflower down into small florets with stems. Wash and place in microwave safe glass bowl with 1/2 water. (You can also steam on the stovetop in a steamer basket.)

  2. Add garlic cloves into bowl with cauliflower

  3. Cook until the cauliflower is soft

  4. Drain and transfer into Cuisinart (food processor.) Depending on size, you may need to process the cauliflower as two separate batches. 

  5. Add ghee, mustard, salt and pepper

  6. Pulse until creamy smooth. This will take around 30 seconds. Remember to scrape the side several times.

  7. Combine both batches (if necessary) and serve!

Storage

  1. Cauliflower mash is excellent in your freezer. Make several batches and freeze for instant cauli-mash on request. 

Recipe Notes

Try adding Nutritional Yeast for a savory cheesy flavor.
